I know that if you overmix muffins they go...Keir, <br /><br />I know that if you overmix muffins they go wrong; I think it's a longevity thing, though. Muffins have more baking powder and a liquid fat content, and they're also best the moment they're cool enough to eat; if you leave them overnight they don't always taste great, wheras cake will happily be fine the next day.
